Mauritian Cuisine part 2

As with part 1, we shall continue to look at some of the dishes that are used in the Mauritian cuisine and how they are prepared.

1.Vindaye Poisson(Fish Vindaye)


Fish Vindaye, also known as Vindaye Poisson in the local language, consists of fried fish mixed with mustard seeds, garlic, turmeric, chilli to give it a distinctive taste and flavour.

Ingredients:

  • 1 Kg of fish fillet
  • Chopped onions
  • 5 crushed garlic cloves
  • Chillies(optional)
  • 2 tsp of crushed mustard seeds
  • 2 tsp of turmeric powder
  • Salt 
  • Cooking oil
  • Lemon Juice

Preparation:

  • Scale and cut the fish fillet into slices and marinate it with salt and 2tsp of lemon juice. Fry in hot oil and put aside.
  • Heat oil in a pan or wok until medium hot and turn off. Mix the chopped onions, garlic, mustard, turmeric in the oil and add fried fish on top.
  • Stir the pan or wok gently enough to allow the ingredients and the fish to blend into each other.
NOTE: DO NOT STIR THE INGREDIENTS WITH A SPOON CONTINUOSLY TO AVOID THE SPICES TO GO SOUR.


2.Bouillon Poisson (Fish Soup)


Ingredients:

  • 1 Kg of fish 
  • Chopped Onions
  • Garlic and ginger paste
  • 1 spring thyme
  • 2 crushed tomatoes
  • Lemon Juice
  • Salt
  • Pepper
  • Coriander for garnishing
  • Oil

Preparation:

  • Scale and slice the fish and season with salt, pepper, and lemon juice.
  • After a few minutes, fry in cooking oil and put aside on an absorbant paper.
  • Add chopped onions, garlic and ginger paste, crushed tomatoes and thyme and let cook for 2-3 minutes.
  • Add 50cl of water and boil for 15 minutes.
  • Add fried fish and let it simmer for 10 minutes.
  • Garnish with chopped coriander.

3.Mine Frite (Chinese Noodles)



Ingredients for noodles:
  • 1 Kg of fresh chinese noodles
  • 500g of minced chicken 
  • Spring Onions
  • 2 tsp of garlic paste
  • 2 tsp of oil
  • 1 tsp of sugar
  • Salt
  • Pepper
  • 4 chopped Mushrooms
  • Long corn
  • 6 tsp of soy sauce
  • 2 tsp of oyster sauce (optional)
Ingredients for garlic sauce:
  • 1 garlic clove
  • 3 tsp of vinegar
  • 3 tsp of water
  • 1/2 tsp of sugar
  • Salt
  • Chilli (optional)

Preparation:

  • Heat oil in a chinese wok, add the garlic paste and minced chicken. Allow to cook for 5 minutes.
  • Add mushrooms, noodles, soy sauce and oyster sauce. Stir well and at the end add the chopped spring onions and 1 tsp of sugar.
  • Mix well and can be accompanied with garlic sauce by mixing all the ingredients mentioned above.

3. Satini Brinjel (Eggplant Chutney)




Ingredients:
  • 1 eggplant
  • 2 tsp of olive oil/cooking oil
  • 1 chopped onion
  • Pepper
  • Salt
  • Coriander for garnishing
  • 2 tsp of vinegar
  • 1 Green chilli

Preparation:

  • Boil or grill the eggplant. 
  • Peel and crush with a fork and put aside.
  • Prepare the vinaigrette by mixing the olive oil, chopped onion, salt, pepper, vinegar and green chilli in a bowl.
  • Mix the crushed eggplant with the vinaigrette and garnish with coriander.

    Slavery in Mauritius

     As you might already know, the International Day for the abolition of slavery is right around the corner. A day celebrated to remind us what slaves endured in the past and had it not gone away, in what plight we might have been. Mauritius too has quite its fair share of slavery history, all starting way back in the 1600s. During the Dutch settlement in Mauritius, in 1600, Van Der Stel was the first governor who brought slaves to the island from Madagascar. A slave is categorised as a person who is forced to obey and work from dusk till dawn for  his masters without any pay.  These slaves were needed to cut ebony trees which were extremely rare trees used to make ships, trade to other countries and were very hard to cut down.  After the Dutch settlement in 1710, when the French rule started, they started bringing even more slaves but this time from Mozambique, India etc. They had to clear forests and cultivate sugarcane and other crops all over the island.                     As stated many times by now, Mauritius is magnificent and today I'm going to tell you about some of the places that you could visit if you come to Mauritius some day. The most prominent attraction at its prime, The Sir Seewoosagur Ramgoolam Botanical Garden (the SSR Botanical Garden) was created over 300 years ago by the French botanist Pierre Poivre. Later on 17 September 1988, the garden was formally named Sir Seewoosagur Ramgoolam Botanical Garden, in honour of the late Prime Minister, who led the country to independence.                   For a long time, it was ranked third among the best gardens around the world. It is notable for its pond of giant water lilies and covers an area of around 37 hectares. Many trees have been planted by great personalities, including Indira Gandhi, princess Margaret, Courtess of Snowdon, Francois Mitterrand and Robert Mugabe.
